{"id":112,"date":"2008-11-27T21:25:37","date_gmt":"2008-11-28T01:25:37","guid":{"rendered":"http:\/\/blog.pamlindberg.com\/?p=112"},"modified":"2008-11-27T21:25:37","modified_gmt":"2008-11-28T01:25:37","slug":"gypsy-stew","status":"publish","type":"post","link":"http:\/\/blog.pamlindberg.com\/?p=112","title":{"rendered":"Gypsy Stew"},"content":{"rendered":"<p>Suzanne\u0092s Vegetarian Gypsy Stew<br \/>\n(Based on Moosewood\u0092s Gypsy Soup)<\/p>\n<p>Serves 6<\/p>\n<p>Ingredients<\/p>\n<p>3 Tablespoon Olive Oil<br \/>\n2 cups chopped onions<br \/>\n4 cloves of crushed garlic<br \/>\n1 cup chopped celery<br \/>\n3 cups peeled\/cubed sweet potatoes or winter squash<\/p>\n<p>2 Tablespoons tamari (or soy sauce)<br \/>\n1 Tablespoon tumeric<br \/>\n1 Tablespoon basil<br \/>\n2 teaspoons paprika<br \/>\n1 bay leaf<br \/>\nDash of cinnamon<br \/>\nDash of cayenne<\/p>\n<p>2 cups chopped fresh (or canned) tomoatoes<br \/>\n1 cup chopped sweet peppers<br \/>\n2 cups cooked chickpeas (garbanzo beans)<br \/>\n3 cups stock or water<\/p>\n<p>Process<\/p>\n<p>1.\tSaut\u00e9 onions, garlic, sweet potatoes\/winter squash and celery in olive oil for 5 to 10 minutes.<\/p>\n<p>2.\tAdd seasonings and the stock\/water. Simmer, covered, for about 15 minutes.<\/p>\n<p>3.\tAdd remaining vegetables.
